Try Apple Omelet for Breakfast!

Ingredients:

3 tbsp whole wheat flour
1/4 tsp baking powder
2 eggs
3 tbsp soy (or cow’s) milk
1 tbsp lemon juice
2 tbsp sugar
1 large apple, thinly sliced
Cinnamon to taste

Directions:

Preheat oven to 375*F.
Combine flour, baking powder, eggs, soy milk, lemon juice, and sugar in a large bowl. Mix well with a whisk.
Pour mixture into a shallow baking dish coated with cooking spray. Arrange apple slices on top and sprinkle with cinnamon.
Bake, uncovered, for 18-20 minutes or until a knife inserted near the center comes out clean. Cut in half.
Serve with your favorite toppings— maple syrup, yogurt, etc.
